Mofo day 22!
My entry into the coconut challenge. This is roasted parsnip chips, with black eyed bean and hummus quesadilla type things, and a chocolate coconut sauce.
I was playing with coconut and noticed that it goes really well with bitter flavours, and as cocoa is a great bitter flavour, I made a sauce out of it. It was lovely and silky but a little too strong, maybe a bit more coconut and a tad less chocolate next time.
I originally meant to make hummus quesadillas and black eyed bean fritters (from Vegan Soul Kitchen), but tried to somehow bake the fritters, which went badly. So I used the half-baked fritters as another filling for the quesadillas, and it tasted good.
I got a giant bag of parsnips so Iām using them up in all different ways, so I thought some kind of chip would be good for dipping and whatnot. Yeah!
